Discover an authentic local Alsatian speciality with Nicole's Lingonberry Jam, presented in a 250g jar adorned with a fabric-covered hood. This traditional Alsatian jam embodies regional craftsmanship passed down through generations.
Slightly tart, it's the perfect accompaniment to toast, game in sauce, regional cheeses or baked apples. Its culinary versatility makes it a classic of Alsatian gastronomy.
The slightly tart and sweet lingonberry jam captivates with its delicate, authentic flavour. Ideal with meat, game or cheese, it can also be enjoyed on toast. Its melt-in-the-mouth texture and unique flavour make it a must-have for gourmet tables and refined recipes with Alsatian character.
Selection and preparation of Lingonberries
To obtain a quality confit, fruit selection is essential. It must be rigorous, selecting only healthy fruit that is perfectly ripe, ensuring an excellent Obernai jam.
The fruit is processed by hand in small quantities to preserve all its natural aromas. Before cooking, it is left to macerate with the sugar in stainless steel bowls for at least 12 hours. This allows optimal flavour infusion.
In the end, the copper cauldrons used for cooking fill up with this precious sweet fruit mixture.
Hot cooking and potting
Cooking is carried out in the old-fashioned way, in 15 litre copper cauldrons, and is controlled by measuring the temperature with a thermometer and checking the sugar content with a refractometer.
The sugar content should be between 63% and 65% so that the product keeps well (we don't add any preservatives) but doesn't crystallise. This traditional technique ensures the quality of our Alsatian jams.
