Discover a local Alsatian speciality with Violet Flower Jam made from whole violet flowers in a fruit jelly to enjoy at tea time on toast... presented in a 250g jar adorned with a fabric-covered hood.

This confit goes well with pancakes or charlottes, as a topping for fruit tarts or in cooking with Foie Gras, Duck or Duck aiguillettes.

Violet flowers are delicate and fragrant, with a mild, slightly sweet flavour. Used in confectionery, syrups, jam or decoration, they add an elegant, fragrant touch. Their intense violet colour and enchanting fragrance make them a popular flower for artisanal products and gourmet recipes.

Selecting and preparing flowers

To obtain a quality confit, flower selection is essential. It must be rigorous, giving preference to flowers that look healthy and are perfectly ripe.

The flowers are processed by hand in small quantities to preserve all their aromas. Before cooking, they are left to macerate with the sugar in stainless steel bowls for at least 12 hours.

In the end, the copper cauldrons used for cooking fill up with flowers.

Hot cooking and potting

Cooking is carried out in the old-fashioned way, in 15 litre copper cauldrons, and is controlled by measuring the temperature with a thermometer and checking the sugar content with a refractometer.

The sugar content should be between 63% and 65% so that the product keeps well (we don't add any preservatives) but doesn't crystallise.
