
Baeckeoffe Mussel and Terrine
The Soufflenheim Baeckeoffe mould is a traditional clay mould used to prepare Baeckeoffe, a typical Alsatian dish.
It is handmade in Soufflenheim, a town in the Bas-Rhin region of Alsace, renowned for its artisanal pottery. The clay used to make the mould is a high quality local clay, extracted from the town's surroundings.
One of the oldest potteries in the village, this is a traditional and authentic production where the potter has not changed a thing in the way he worked, either his father or his grandfather.
Calibration is carried out in a purely traditional way: plaster moulds are placed on an eccentric lathe to produce the shape of the oval ellipse.
Only two potters in Soufflenheim still use this method and we're working with them !
The mould is specially designed for the preparation of Baeckeoffe, a dish made from meat (pork, beef, lamb), potatoes, onions and vegetables, all marinated in white wine and spices, and then slowly baked in the clay mould, giving it a melting texture and incomparable flavour.
The Soufflenheim Baeckeoffe mould is made using traditional techniques handed down from generation to generation, which guarantee exceptional quality and longevity. Each mould is unique, with its own irregularities and manufacturing marks, which give it an authentic charm.
It's also a highly prized collector's item, but it's also very practical for everyday cooking. It can be used to prepare other stews or gratins, or even to bake bread or cakes.
