The Potteries of Soufflenheim are fired at more than 1000°C, these potteries are of high quality and will withstand the baking of your traditional or modern oven without any worries. They are also suitable in the microwave and in the dishwasher, offering modern practicality without compromise on tradition.

All the lids of the Baeckeoffe Terrine also have a hole allowing natural steam ventilation during Cooking, a guarantee of Soufflenheim quality and optimal culinary results.

What are the different sizes of Baeckeoffe dishes?

The Baeckeoffe platter comes in several sizes:

  • Baeckeoffe terrine for 1 person: 17 cm, capacity 0.50 L (L x W x H: 17 cm x 11.5 cm x 8.5 cm)
  • Baeckeoffe terrine for 1 to 2 people: 21 cm, capacity: 0.75 L (L x W x H: 21 cm x 13 cm x 11 cm)
  • Baeckeoffe terrine for 4 people: 30 cm, capacity: 2 L (L x W x H: 30 cm x 20 cm x 15.5 cm)
  • Baeckeoffe terrine for 6 people: 33 cm, capacity: 3.5 L (L x W x H: 33 cm x 20 cm x 11.5 cm)

Can I put it in the oven?

Yes, without any problem, pottery can withstand high heat, but only in the oven.

Will it fit in my oven?

Yes, as long as your oven is a standard 60 cm wide.

Should the terrine be sealed with pastry?

No, we strongly advise against sealing your terrine, as the flour-water mixture becomes so hard during cooking that it will be almost impossible to open your terrine without chipping the lid or the terrine. Instead, we recommend using baking paper to place between the lid and the terrine, so you can keep an eye on your cooking at all times.

Instructions for use

When you first use your Baeckeoffe Terrine, please leave to soak (Terrine + Lid) for at least 2 hours in cold water. Then drain the water and dry it. Cook 2 to 3 cm of milk in the Pottery in the oven. Once the milk is hot, leave to cool. After air-drying it in a dry, well-ventilated place, it 's ready to use.
This procedure is necessary when using the device for the first time.
Afterwards, you can use your Baeckeoffe Terrine by placing it in the cold-start oven and heating it to the required temperature. When removing the Terrine from the oven, never place it on a cold or icy surface to avoid thermal shock. Once cooled, clean your Baeckeoffe Terrine with warm water and a sponge or brush (non-metallic) and washing-up liquid. After drying, store your Terrine in a dry, well-ventilated place.

Note: Sometimes you can see very thin cracks in the glaze of the Baeckeoffe Terrine. These micro-cracks are essential if the clay in the pottery is to expand and contract without breaking. They are more or less visible depending on the piece and the colour, and become more pronounced with time and use.

A natural shrinkage of pottery ranging from 2 to 8% of the pottery is completely normal due to the phenomenon of evaporation of water being transformed into gas causing the molecules to move closer together.

These characteristics are natural and authentic properties of handcrafted pottery made in Alsace, and do not constitute manufacturing defects.

It can also happen that a lack of paint can occur under the handles of the mould by turning it over, this is not a defect because everything is covered with the protective varnish and does not present an aesthetic lack because it is located under the handles and not visible.
