Also consulted since Which size of Baeckeoffe Terrine to choose?

Can I put it in the oven?

Yes, without any problem, pottery can withstand high heat, but only in the oven.

Will it fit in my oven?

Yes, as long as your oven is a standard 60 cm wide.

Should the terrine be sealed with pastry?

No, we strongly advise against "batting" your terrine, as the flour-water mixture becomes so hard during cooking that it will be almost impossible to open your terrine without chipping the lid or the terrine.
Instead, we recommend using baking paper to place between the lid and the terrine, so you can keep an eye on your cooking at all times.

Instructions for use

Preparing your pottery before its first use

Handmade using skills passed down through generations, our Soufflenheim clay pottery needs a little preparation before it is used. This lets the clay absorb moisture, cope better with changes in temperature and cook your dishes evenly.

Preparation in three steps

  1. Submerge the pottery completely in cold water for about 12 hours, so the clay is thoroughly hydrated.
  2. Take it out of the water and leave it to dry completely in the open air.
  3. Once fully dry, pour 2 to 3 cm of milk into the bottom of the dish and place it in a cold oven. Raise the temperature gradually until the milk is very hot, without letting it boil. Switch off the oven, leave everything to cool naturally, then pour the milk away.

This traditional method nourishes the pores of the clay and prepares the pottery for all your future slow-cooked dishes.

Avoiding thermal shock

Never put cold pottery into an oven that is already very hot, and never rinse it under cold water straight out of the oven. Clay prefers gradual changes in temperature, both when heating up and when cooling down.

Properly prepared, your pottery will last for many years. It encourages slow, even cooking, respects the natural flavour of food and performs better the more you use it.

Note : Sometimes you can see very thin cracks in the glaze of the Baeckeoffe Terrine. These micro-cracks are essential if the clay in the pottery is to expand and contract without breaking. They are more or less visible depending on the piece and the colour, and become more pronounced with time and use.

A natural shrinkage of pottery ranging from 2 to 8% is completely normal, due to the phenomenon of evaporation of water, which is transformed into gas, causing the molecules to move closer together.

These characteristics are natural and authentic properties of handcrafted pottery made in Alsace, and do not constitute manufacturing defects.

It can also happen that a lack of paint can occur under the handles of the mould by turning it over, this is not a defect because everything is covered with the protective varnish and does not present an aesthetic lack because it is located under the handles and not visible.
