Handcrafted Alsatian Manufacturing

Langhopf Blue mold from Soufflenheim made from clay from the Haguenau Forest, handcrafted and hand painted decorated with white hearts in the Pottery Workshops of Soufflenheim in Alsace. Each piece is unique, hand painted according to the creativity of the potter. This traditional mold withstands oven temperatures exceeding 1000°C and is microwave and dishwasher safe.

The Langhopf is an Alsatian brioche made from almonds, walnuts, hazelnuts, dried fruits and various spices. It is brushed with a mixture of butter, sugar and cinnamon to enhance the regional flavours. This elongated terracotta mold was originally developed by Colmarian pastry chef Jean Deutschmann.

Guaranteed 100% lead-free, this Soufflenheim mold represents local craftsmanship and knowledge passed down from father to son by master potters. The clay comes from the Haguenau Forest region, a testament to Alsatian authenticity and tradition.

The Langhopf differs from the Kougelhopf by its elongated shape and the addition of toasted hazelnuts, roasted almonds, walnuts and spices within the leavened dough. This traditional mold is designed to facilitate unmoulding and presentation of the Alsatian cake.

Once out of the oven, after unmoulding, you can coat it with melted butter and sprinkle with a mixture of fine sugar and cinnamon, or simply dust with icing sugar as with Kougelhopf. The Potteries of Soufflenheim are fired at over 1000°C and withstand oven temperatures without any issue.

Can I put it in the oven?

Yes, absolutely, pottery can withstand high heat, but only in the oven! We have successfully tested a marble cake.

Will it fit in my oven?

Yes, as long as your oven is a standard 60 cm wide.

Recipe for Alsatian Langhopf
  • 500 g flour
  • 25 g fresh baker 's yeast
  • 10 g salt
  • 130 g butter
  • 75 g sugar
  • 3 small eggs
  • 15 cl whole milk
  • 100g toasted chopped walnuts
  • 50 g toasted and chopped hazelnuts
  • 50 g peeled almonds, toasted and chopped
  • 100 g raisins macerated in a little kirsch
  • 1 pinch of spices: cinnamon, powdered ginger, ground star anise, ground cloves
Instructions for use

When using your Langhopf mould for the first time, we advise you to grease it well with a fatty substance (oil or margarine, avoid butter) and place it in your cold oven which you will heat to 120°C for 20 minutes, and repeat this operation a second time for good release from the mould. This procedure is necessary when using the device for the first time. Thereafter, you will use your Langhopf mould by greasing it only once, by placing it in the cold oven which you will heat to the required temperature. When removing the mould from the oven, never place it on a cold or icy surface to avoid thermal shock. Once cooled, clean your Langhopf mould with warm water and a sponge or brush (non-metallic) and washing-up liquid. After drying, store your mould in a dry, well-ventilated place and it will give you many years of satisfaction.

You can sometimes see very thin cracks in the enamel of the Langhopf mold. These micro-cracks are essential to allow the clay in the pottery to expand and contract without breaking. They are more or less visible depending on the piece and the colour, and become more pronounced over time and with use. A natural shrinkage of the pottery of between 2 and 8% of the diameter is completely normal, due to water evaporation transforming into gas.
