Nicole's White Cherry and Alsatian Kirsch Jam is a local Alsatian speciality. It comes in a 250g jar with a fabric-covered hood. A perfect addition to your morning toast, Alsatian kirsch brandy lightly enhances the delicate flavour of white cherries.

Alsatian white cherries are rare and delicate, with a sweet, slightly tart flavour. Grown with care, they are prized for their crunchy texture and refined taste. Perfect in jams, desserts or simply eaten fresh, they are an Alsatian terroir treasure loved by gourmets.

Selecting and preparing the cherries

To obtain quality confit, fruit selection is essential. It must be rigorous, giving preference to fruit that looks healthy and is perfectly ripe. The fruit is processed by hand in small quantities to preserve all their aromas. Before cooking, they are left to macerate with the sugar in stainless steel bowls for at least 12 hours. Finally, the copper cauldrons used for cooking fill with fruit.

Cooking is carried out in the old-fashioned way, in 15 litre copper cauldrons, and is controlled by measuring the temperature with a thermometer and checking the sugar content with a refractometer. The sugar content should be between 63% and 65% so that the product keeps well (we don't add any preservatives) but doesn't crystallise.
