Cracks and Micro-cracks, Signs of Authenticity
You can sometimes see in the 20 cm soufflé mould very fine cracks in the glaze. These micro-cracks are necessary to allow the clay in the pottery to expand and contract without breaking during cooking. They are more or less visible depending on the piece and colour, and become more pronounced over time and with repeated use. This characteristic is proof of the authenticity and quality of your traditional Alsatian pottery.
