Instructions for use

Preparing and caring for your terracotta mould

Terracotta spreads heat gently and evenly, which makes it ideal for kougelhopf. For a cake that turns out effortlessly, the mould needs preparing before its first use: this is called seasoning.

Seasoning

  1. Grease the inside of the mould generously with butter.
  2. Place it in a preheated oven at 120 °C for about 20 minutes, so the butter soaks into the pores of the clay.
  3. Leave it to cool completely, then wipe off any excess fat with kitchen paper.

Repeat the process a second time in exactly the same way: this double seasoning ensures easy release.

Every time you use it

Lightly butter the mould before pouring in the batter, even after many uses. Your cakes will come out beautifully golden.

Care: no water, no detergent

Never wash your mould. Simply wipe it with kitchen paper after use. The thin film of fat that remains protects the mould and improves its performance over time.

Well cared for, it will serve you for many years for your kougelhopfs and all your home baking.

You can sometimes see very thin cracks in the enamel in the Kougelhopf molds. These micro-cracks are essential if the clay in the pottery is to expand and contract without breaking. They are more or less visible depending on the piece and the colour, and become more pronounced with time and use.

Note: A natural shrinkage of the pottery of between 2 and 8% of the diameter of the pottery is completely normal, due to the phenomenon of water evaporating and transforming into gas, causing the molecules to move closer together.

These characteristics are natural and authentic properties of handcrafted pottery made in Alsace, and do not constitute manufacturing defects.
