Traditional Alsatian Manufacturing

Langhopf mould from Soufflenheim made from clay from the Haguenau Forest, handcrafted and hand painted in Red colour decorated with white hearts in the Pottery Workshops of Soufflenheim in Alsace, also available in Soufflenheim Blue. This traditional Alsatian pottery perpetuates the craftsmanship of Master Potters across several generations.

The Langhopf is an Alsatian pastry specialty composed of Almonds, Nuts, Hazelnuts, dried fruits and spices. This delicious brioche is then brushed with a Butter, Sugar and Cinnamon mixture for even more indulgence. Shaped in an elongated terracotta mould, the Langhopf was originally created by Colmarian pastry chef Jean Deutschmann, who established this emblematic culinary tradition of Alsace.

Genuine local craftsmanship from Soufflenheim, this mould is guaranteed 100% lead-free and manufactured according to ancestral methods. Each decoration created on Soufflenheim pottery is unique, hand painted according to the creativity of the potter and does not reflect the current visual layout of the painted patterns.

Langhopf is made with a leavened dough like Kougelhopf. The main difference lies in the addition of roasted hazelnuts, roasted almonds, nuts and spices, as well as the shape of the mould which is elongated. Proceed for the dough as for Kougelhopf by adding the hazelnuts, walnuts, almonds and spices as soon as the dough comes off your hands or the bowl.

Out of the oven, after having unmoulded it, you can coat it with melted butter and sprinkle it with a mixture of fine sugar and cinnamon or simply sprinkle with icing sugar like on Kougelhopf. The Potteries of Soufflenheim fired at more than 1000°C will withstand the firing of your oven without any concerns, and are also suitable in the microwave and in the dishwasher.

Can I put it in the oven?

Yes, without any problem, Soufflenheim pottery can withstand high heat. We tested a marble cake and the result was outstanding. Use only in the oven and respect standard temperatures.

Will it fit in my oven?

Yes, as long as your oven is a standard 60 cm wide. Its dimensions are 35 cm in length and 9 cm in height.

Recipe for Alsatian Langhopf
  • 500 g flour
  • 25 g fresh baker's yeast
  • 10 g of salt
  • 130 g butter
  • 75 g sugar
  • 3 small eggs
  • 15 cl of whole milk
  • 100g toasted chopped walnuts
  • 50 g of toasted and chopped hazelnuts
  • 50 g of peeled almonds, toasted and chopped
  • 100 g of raisins macerated in a little kirsch
  • 1 pinch of spices: cinnamon, powdered ginger, ground star anise, ground cloves
Instructions for use

When using your Langhopf mould for the first time, we advise you to grease it well with a fatty substance (Oil or Margarine, avoid Butter) and place it in your cold oven which you will heat to 120° for 20 minutes, then repeat this operation a second time for a good release from the mould. This procedure is necessary when using the device for the first time. Thereafter, you will use your Langhopf mould by greasing it only once, placing it in the cold start oven which you will heat to the required temperature. When removing the Mould from the oven, never place it on a cold or icy surface to avoid thermal shock. Once cooled, clean your Langhopf mould with warm water and a sponge or brush (non-metallic) and washing-up liquid. Once dry, store your Mould in a dry, well-ventilated place and it will give you years of satisfaction.

You can sometimes see very thin cracks in the enamel in the Langhopf moulds. These micro-cracks are essential if the clay in the pottery is to expand and contract without breaking. They are more or less visible depending on the piece and the colour, and become more pronounced with time and use. A natural shrinkage of the pottery of between 2 and 8% of the diameter of the pottery is completely normal, due to the phenomenon of water evaporating and transforming into gas.
