This Alsatian brioche is made with carefully balanced almonds, walnuts, hazelnuts, dried fruit and fine spices. It is then brushed with a butter, sugar and cinnamon mixture for incomparable deliciousness.
The Langhopf is shaped in this elongated clay mould, originally created by Colmar pastry chef Jean Deutschmann. Its authentically Alsatian character makes it a true regional culinary heritage, recognised by its characteristic elongated shape.

Langhopf is made from leavened dough like Kougelhopf. The difference lies in the addition of roasted hazelnuts, roasted almonds, nuts and fine spices, as well as in the specific morphology of the mould used, which is perfectly suited to this baking creation.


It is completely elongated and not rounded like the Kougelhopf mould. This special shape gives the Langhopf its own culinary identity and elegant table presentation.
Proceed for the dough exactly as for the Kougelhopf, adding the hazelnuts, walnuts, almonds and spices to the dough as soon as it pulls away from your hands or the bowl if you are using a food processor.
Out of the oven, after carefully unmoulding it, you can coat it with melted butter and sprinkle it with a mixture of fine sugar and cinnamon, or simply dust it with icing sugar as you would Kougelhopf.
The Potteries of Soufflenheim are fired at over 1000°C. These high-quality ceramics withstand intensive oven use without any problems and are also suitable for microwave and dishwasher.
Yes, absolutely. Soufflenheim pottery can withstand very high temperatures. However, please note that this use is reserved for the conventional oven. We tested a marble cake made in this mould, and the result is outstanding, demonstrating the exceptional quality of these potteries.
Yes, perfectly, as long as your oven is a standard 60 cm internal width. Please check the dimensions of your baking space before purchase for optimal positioning.
For the first use of your Langhopf mould, we strongly recommend thoroughly greasing the interior with suitable fat (groundnut oil or margarine, absolutely avoid butter as it sticks). Then place the mould in your cold oven, which you heat gradually to 120° for exactly 20 minutes. Allow the mould to cool completely before removing it. Repeat this procedure a second time to ensure good unmoulding on your first baking attempt. This procedure is essential for first use.
Thereafter, use your Langhopf mould by greasing it lightly only once, and placing it in the cold start oven which you heat to the required temperature for your recipe.
When removing the mould from the oven, never place it directly on a cold or icy surface to avoid damaging thermal shock.
After fully cooling, gently clean your Langhopf mould with lukewarm water, a soft sponge or brush with non-metallic bristles and mild washing-up liquid.
After drying, store your mould in a dry, well-ventilated place and it will bring you joy for many years to come.
You may occasionally notice very thin, superficial cracks in the enamel of the Langhopf mould. These natural micro-cracks are essential so that the clay in the pottery can expand and contract without risk of breakage or cracking. They are more or less visible depending on the individual piece and chosen colour, and gradually become more pronounced with time and regular use.
Important note: Natural shrinkage of pottery between 2 and 8 % of the pot diameter is completely normal and expected, as the physical phenomenon of water evaporation, which transforms into gas, causes a gradual bringing together of clay molecules to each other.
