This artisanal jam offers a creamy texture and subtle taste resulting from the perfect combination of fresh and sweet Alsatian asparagus from the region's terroir.

White asparagus from Alsace is cultivated in the region's fertile soils and is recognised worldwide for its delicate, fine flavour. Perfect in salads, gratins, jams or served with sauce, it embodies the excellence of Alsatian culinary heritage.

Selection and preparation of Alsatian asparagus

To produce a premium quality jam, asparagus selection is paramount. It must be rigorous, selecting only healthy vegetables at perfect ripeness. Each asparagus is carefully chosen to guarantee the finest taste experience.

The asparagus is processed by hand and in small batches to preserve all natural flavours and aromas. Before cooking, it is left to macerate with sugar in stainless steel bowls for at least 12 hours, allowing optimal flavour fusion.

Finally, the copper cauldrons used for cooking fill with this delicious mixture.

Cuisson et Mise en pot

Traditional cooking and hot potting

Cooking is carried out in the traditional manner in copper cauldrons with 15-litre capacity, a technique passed down through generations. It is controlled by precise temperature measurements using a thermometer and verification of sugar content with a refractometer.

The sugar content must be between 63% and 65% to ensure perfect preservation of the jam (we add no preservatives) without crystallisation. This artisanal method guarantees a healthy and delicious product.
