Made from the pulp of wild rosehips, this jam is typically Alsatian and is ideally served with white cheese. The subtle combination of the delicate acidity of wild fruits and the exotic aroma of bourbon vanilla creates a refined flavour harmony.

The rosehip jam with vanilla offers a refined blend between the tangy sweetness of wild fruits and the exotic flavour of vanilla. Its fine texture and subtle taste make it an ideal treat for toast, desserts or cheese. An authentic, elegant delight, a symbol of artisan creativity and Alsatian excellence.

Selection and preparation of rosehips

To obtain a quality confit, fruit selection is essential. It must be rigorous, selecting only healthy and perfectly ripe fruits. Only the finest rosehips are selected.

The fruits are processed by hand in small quantities to preserve all their natural aromas. Before cooking, they are left to macerate with the sugar in stainless steel bowls for at least 12 hours, allowing better flavour absorption.

In the end, the copper cauldrons used for cooking fill with this precious raw material.

Hot cooking and potting

Cooking is carried out in the traditional way, in 15 litre copper cauldrons, and is controlled by measuring the temperature with a thermometer and checking the sugar content with a refractometer.

The sugar content should be between 63% and 65% so that the product keeps well (we don't add any preservatives) and doesn't crystallise. This jam meets the highest quality standards.
