This tasty blend of diced fresh apples, walnuts, hazelnuts, almonds and chestnut honey combined with subtle spices is the perfect accompaniment to foie gras or a simple slice of fresh brioche. Gingerbread jam is deliciously fragrant, capturing the warm flavours of cinnamon, ginger and nutmeg. With its creamy texture and gourmet aromas, it becomes the ideal accompaniment to toast, pancakes and desserts, evoking the festive spirit and Alsatian culinary tradition.

Selection and Preparation of Fruit, Dried Fruit and Gingerbread

To obtain a quality confit, fruit selection is essential. It must be rigorous and favour fruit that looks healthy and is perfectly ripe. Alsatian jam producers respect this fundamental principle of craft work.

The fruit is processed by hand in small quantities to preserve all their aromas. Before cooking, they are left to macerate with the sugar in stainless steel bowls for at least 12 hours. This essential step allows the sugar to gradually diffuse into the fruit.

In the end, the copper cauldrons used for cooking fill with carefully prepared fruit, guaranteeing flawless results.

Hot Cooking and Potting

Cooking is carried out in the old-fashioned way, in 15 litre copper cauldrons, and is controlled by measuring the temperature with a thermometer and checking the sugar content with a refractometer. This traditional Alsatian process guarantees jam of superior quality.

The sugar content should be between 63% and 65% so that the product keeps well (we don't add any preservatives) but doesn't crystallise. This jam from Obernai thus offers optimal shelf-life without chemical additives.
