This mulled wine confit will be a delight on buttered toast, or served with foie gras or characterful cheeses. Its refined and spicy taste captures the warming flavours of this emblematic winter beverage.
Made in the Vallée de Villé in Alsace, Nicole's jams are recognised Alsatian specialities. You'll find a wide selection of jams, jellies and confits in the range, all prepared according to ancient traditions.
Delicious and spicy, this mulled wine confit captures the warm flavours of this winter drink. Made with red wine and spices like cinnamon and cloves, it's the perfect accompaniment to desserts, toast or cheese. A refined delight that evokes Alsatian festivities and conviviality.
Fruit selection and preparation
To obtain a quality confit, fruit selection is essential. It must be rigorous, selecting only healthy fruit that are perfectly ripe.
The fruit are processed by hand in small quantities to preserve all their aromas. Before cooking, they are left to macerate with the sugar in stainless steel bowls for at least 12 hours.
In the end, the copper cauldrons used for cooking fill up with carefully selected fruit.
Hot cooking and potting
Cooking is carried out in the old-fashioned way, in 15 litre copper cauldrons, and is controlled by measuring the temperature with a thermometer and checking the sugar content with a refractometer.
The sugar content should be between 63 % and 65 % so that the product keeps well (we don't add any preservatives) but doesn't crystallise. This method guarantees a superior quality confit with intense and lasting flavours.
