This Alsatian jam beautifully combines the natural sweetness of apples with the crunchy richness of walnuts and the fragrant warmth of cinnamon. Its delicious, slightly spiced and comforting flavour makes it an ideal treat for morning toast, indulgent pancakes or as an accompaniment to regional cheeses. Selection and preparation of apples
To produce a high-quality jam, rigorous fruit selection is essential. Only apples with a healthy appearance and perfect ripeness are selected. The fruit is processed by hand and in small quantities to preserve all natural aromas. Before cooking, it is left to macerate with the sugar in stainless steel bowls for at least 12 hours, allowing better flavour extraction.
This careful preparation guarantees a homogeneous texture and authentic flavour. In the end, the copper cauldrons for cooking fill with this carefully prepared mixture.
Hot cooking and potting
Cooking is carried out in the traditional manner in copper cauldrons with a capacity of 15 litres. This traditional method guarantees optimal flavour extraction. The process is controlled by precise temperature measurements using a thermometer and rigorous checking of the sugar content by refractometer.
The sugar content must be between 63 and 65 percent so that the product keeps well (we add no artificial preservatives) and does not crystallise. This authentic recipe breathes the traditions of Alsatian cuisine.
