It is the perfect accompaniment to your morning sandwiches. The Alsatian Whisky will lightly enhance the taste of the Orange, creating subtle harmony.
The Orange Jam with Alsatian Whisky combines the tangy sweetness of oranges with the aromatic richness of local whisky. Subtly sweet and tangy, it adds a touch of elegance to sandwiches, desserts or savoury dishes. A gourmet speciality that marries Alsatian tradition and originality for unique flavours.
Selecting and Preparing Oranges
To obtain a quality confit, fruit selection is essential. It must be rigorous, giving preference to fruit that looks healthy and is perfectly ripe.
The fruit is processed by hand in small quantities to preserve all their aromas. Before cooking, they are left to macerate with the sugar in stainless steel bowls for at least 12 hours. These steps ensure optimal flavour infusion.
In the end, the copper cauldrons used for cooking fill up with delicious fruit.
Hot Cooking and Potting
Cooking is carried out in the old-fashioned way, in 15 litre copper cauldrons, and is controlled by measuring the temperature with a thermometer and checking the sugar content with a refractometer.
The sugar content should be between 63% and 65% so that the product keeps well (we add no preservatives) but does not crystallise. This precision ensures a perfect texture and exceptional longevity.
