Discover a local Alsatian speciality with Nicole's Raspberry and Raspberry Brandy Jam in a 250g jar decorated with a fabric-covered hood. This traditional Alsatian jam combines the delicacy of fruit with a touch of regional spirit.
It is the perfect accompaniment to your morning sandwiches and pastries. The Raspberry Brandy gently enhances the taste of the fruit, creating a subtle and authentic flavour experience that will delight your palate.
Alsatian raspberries are delicate and fragrant, with a remarkable balance between sweetness and acidity. Grown in rich, fertile soil, they are ideal for desserts, artisanal jams or coulis. Harvested when perfectly ripe, they reflect Alsace's know-how and the excellence of its regional produce.
Selection and preparation of raspberries
To obtain a premium quality confit, fruit selection is essential. It must be rigorous, selecting only healthy fruit that is perfectly ripe.
The fruit is processed by hand in small quantities to preserve all its natural aromas. Before cooking, it is left to macerate with the sugar in stainless steel bowls for at least 12 hours, allowing complete flavour absorption.
In the end, the copper cauldrons used for cooking fill up with carefully prepared fruit.
Hot cooking and jarring
Cooking is carried out in the traditional way, in 15 litre copper cauldrons, and is controlled by measuring the temperature with a thermometer and checking the sugar content with a refractometer.
The sugar content should be between 63% and 65% so that the product keeps well (we do not add any preservatives) while maintaining the perfect texture.
