The Bourbon Vanilla pods from Madagascar subtly enhance the flavour of the Chestnuts and give you the impression of tasting Candied Chestnuts. This harmonious blend between the Alsatian fruit and exotic spice creates an authentic and refined taste.

The Chestnut and Bourbon Vanilla Jam offers a smooth, delicately flavoured treat. The combination of melting chestnuts and exotic vanilla creates a rich, comforting flavour. Perfect on toast, crêpes or desserts, it adds a gourmet and refined touch to any moment of tasting. Each spoonful transports you to the heart of Alsatian culinary traditions.

Selection and preparation of chestnuts

To obtain quality jam, fruit selection is essential. It must be rigorous, selecting only healthy, perfectly ripe fruits from the best Alsatian regions.

The fruits are processed by hand in small quantities to preserve all their aromas. Before cooking, they are left to macerate with the sugar in stainless steel bowls for at least 12 hours, allowing optimal flavour infusion.

In the end, the copper cauldrons used for cooking fill up with fruit, testifying to invaluable Alsatian craftsmanship.

Hot cooking and potting

Cooking is carried out in the traditional way, in copper cauldrons with a capacity of 15 litres, and is controlled by measuring the temperature with a thermometer and checking the sugar content with a refractometer. This traditional method guarantees perfect texture and natural preservation.

The sugar content should be between 63% and 65% so that the product keeps well (we don't add any preservatives) but doesn't crystallise. This technical precision ensures an exceptional jam that will delight the most demanding palates.
