Authentic Alsatian craftsmanship

Discover a local Alsatian speciality with Nicole's preserves, Quince Jelly, presented in a 250g jar adorned with a fabric-covered hood. This quince jelly embodies the artisanal expertise passed down through generations in the Alsace region.

The quince tree produces large, yellow, pear-shaped fruits with downy skin. The flesh is very hard and inedible raw, but reveals its full flavour during cooking. Many quince trees are found in Alsace, and when they are not used to make Schnapps, a local spirit, excellent quince jellies are made from them.

Alsatian quinces, a fragrant yellow fruit, are renowned for their firm, tart flesh. Grown in the orchards of Alsace, they are ideal for jams, jellies and compotes. Their unique flavour, combined with a perfect texture for cooking, makes them an essential part of the Alsace terroir and a regional gastronomic treasure.

Fruit selection and preparation

To obtain a quality confit, fruit selection is essential. It must be rigorous, selecting only healthy fruit that are perfectly ripe. Each Alsatian quince is carefully selected to guarantee the best result.

The fruit are processed by hand in small quantities to preserve all their delicate aromas and flavours. Before cooking, they are left to macerate with the sugar in stainless steel bowls for at least 12 hours, allowing better extraction of natural juices.

In the end, the copper cauldrons used for cooking fill up with carefully prepared fruit.

Hot cooking and potting

Cooking is carried out in the old-fashioned way, in 15 litre copper cauldrons, and is controlled by measuring the temperature with a thermometer and checking the sugar content with a refractometer. This traditional method guarantees an authentic and flavourful quince jelly.

The sugar content should be between 63% and 65% so that the product keeps well (we don't add any preservatives) but doesn't crystallise. This precision guarantees perfect texture and optimal preservation of your Alsatian preserve.
