Recipe for Breaded Dab with Sweet Horseradish

Serves 4 - Preparation time 15 minutes - Cooking time 10 minutes

Ingredients:

  • 4 fillets of dab (150g to 180g each)
  • 1 tablespoon of ready-to-use horseradish
  • 1 lemon juice
  • 75 g butter
  • 1 egg
  • 20 cl fresh cream
  • 6 tablespoons flour
  • 6 tablespoons breadcrumbs
  • salt and pepper

Rinse the filets and pat them dry. Pour the flour into a deep dish and the breadcrumbs into another, break and beat the whole egg in a third dish, add salt and pepper.

Dip the fillets successively in the flour, the beaten egg and the breadcrumbs, on both sides. Heat the butter in a frying pan, place the breaded fish fillets on top and cook for 3 minutes on each side over medium heat. Arrange the dabs on a serving dish and season with salt and pepper. Keep warm.

Discard the cooking butter, pour the lemon juice into the pan and add the crème fraîche. Boil for 1 minute, then add the ready-to-use horseradish and stir off the heat. Serve the sauce in a sauce boat and accompany with steamed broccoli.
