Slightly tart, it's the perfect accompaniment to your cheeses, especially Munster cheese, or baked apples. This sauerkraut confit with Alsatian Riesling combines the natural acidity of sauerkraut with the fruity, refined flavours of the famous Alsatian wine. Its melt-in-the-mouth texture and balanced flavour make it a perfect accompaniment to meats, especially pork or Alsatian sausages. A traditional gourmet speciality from the Alsatian terroir, ideal as a gift or souvenir from Alsace.

Selecting and preparing vegetables

To obtain a high-quality Alsatian confit, vegetable selection is essential. It must be rigorous, giving preference to vegetables that look healthy and are perfectly ripe. This requirement guarantees an exceptional product in Obernai.

The vegetables are processed by hand in small quantities to preserve all their aromas. Before cooking, they are left to macerate with the sugar in stainless steel bowls for at least 12 hours. This ancestral method allows for optimal flavour infusion.

In the end, the copper cauldrons used for cooking fill up with vegetables, guaranteeing authentic, traditional processing.

Hot cooking and potting

Cooking is carried out in the old-fashioned way, in 15 litre copper cauldrons, and is controlled by measuring the temperature with a thermometer and checking the sugar content with a refractometer. This technique guarantees a first-class Alsatian jam.

The sugar content should be between 63% and 65% so that the product keeps well (we don't add any preservatives) but doesn't crystallise. A guarantee of flavour and natural preservation for your Alsatian confit.
