Discover a local Alsatian speciality with Nicole's Quetsches d'Alsace and Cinnamon Jam, presented in a 250g jar adorned with a fabric-covered hood.

The Quetsche is a large plum oblong with purple skin, a typical Alsatian fruit producing a thick and very fragrant jam that reminds us of the aroma of our Grandmothers' Tarts.

The Quetsches d'Alsace, small purple plums with a sweet, slightly tart flavour, are a typical fruit of the region. Rich in taste, they are perfect for tarts, jams or mirabelle plum distilleries. Harvested in late summer, they embody the authentic flavour of Alsatian terroir.

Selection and Preparation of Quetsches

To obtain a jam of superior quality, fruit selection is essential. It must be rigorous, giving preference to fruit that looks healthy and is perfectly ripe.

The fruit is processed by hand in small quantities to preserve all their aromas. Before cooking, they are left to macerate with the sugar in stainless steel bowls for at least 12 hours.

In the end, the copper cauldrons used for cooking fill up with fruit.

Cooking and Hot Potting

Cooking is carried out in the traditional manner, in copper cauldrons with a capacity of 15 litres, and is controlled by measuring temperature with a thermometer and checking sugar content with a refractometer.

The sugar content should be between 63 and 65 % so that the product keeps well (we add no preservatives) but does not crystallise.
