Lammele is a biscuit in the shape of a lamb that is traditionally made at Easter for children. This Alsatian tradition has been cherished for several generations and remains an essential part of regional family celebrations during Easter.
It consists of a sponge cake type biscuit dough, which takes the shape of a lamb in a terracotta mould made up of two assembled shapes and crafted according to traditional methods from Soufflenheim.
For the realisation, nothing could be simpler. Fanny and Fabrice, our passionate pastry chefs, have thought of everything: the dry ingredients are weighed and packaged in numbered bags, you just have to follow their instructions, add a little water and you are sure to make wonderful Alsatian Lamalas.
Don't forget to order your Pascal Lamala Lamb Mould if you don't have one! This ceramic mould is essential to achieve the iconic shape of this Easter biscuit.
To prepare Alsatian Lamalas, you can either use a food processor or work by hand. The Lamala preparation kit is suitable for all baking levels, from beginners to advanced bakers.
