Alsatian recipe for Fleischkiechle (Meatcakes)

Fleischkiechle (meat cakes) is a traditional Alsatian dish that is served with a green salad or roasted potatoes.

Ingredients for 4 people:

  • 200 g beef
  • 200 g pork meat (collar)
  • 125 g fresh bacon
  • 50 g stale bread
  • 1 large onion
  • 1 clove of garlic
  • 1 egg
  • a few sprigs of parsley
  • 1 glass of milk
  • 1 tablespoon of mustard
  • salt and pepper
  • a few spoonfuls of flour

Serving suggestion:

Recipe:

Soak the bread in the milk, then in the meantime, chop the onion and fry it in a little oil and set aside

Dice all the meat and chop it with the garlic, parsley and onion.

In a bowl, mix the minced meat with the egg, the bread that has been soaked in milk and the mustard, then add salt and pepper to the mixture.

Shape the mixture into patties about 2 cm thick, flour them and cook them in an oiled frying pan for about ten minutes, turning them regularly.

Serve with mashed potatoes or fried potatoes and a green salad, add a Pinot Noir to accompany this delicious dish!
